Cantucci di Casa Mola
Cantucci are great dipped in the red or white wine that’s left in your glass after dinner, or a sweet Vin Santo, Limoncello, or Amaro, or why not, together with your morning coffee, or like my grandchildren, reach for a few every time they pass through the kitchen.
Ingredients:
225 g. 00 white flour
2 medium eggs
100 g. sugar
100 g. almonds
35 g. butter
1tsp. baking soda
1tsp. vanilla extract or equivalent, or the zest of one orange.
Procedure:
Beat the eggs and mix in the sugar, melted butter and vanilla extract.
Stir in the almonds.
Mix the baking powder with the flour and fold it into it the egg mixture.
Knead the dough until it comes together and is firm and silky and divide it into three equal parts.
Roll them into lengths of approximately 25 cm.
Bake for 30 minutes at 175 c.
Remove from the oven and while they are warm, slice them diagonally into 1 cm. thick pieces.
Bake the sliced cantucci for another 5-6 minutes at the same temperature.
Makes about 30-35 biscotti.
Note: Biscotti, means twice baked.
